To Rinse or Not
No, it's not about cleaning cloths or money laundry.
I was talking to my Uncle Nick last time in TO about making chew mew noodle. I told him I rinse the noodle in tap water before cook it on pan, and the noddle get really crispy....
Of course, worked as a chef, he knows exactly what I did wrong: the raising.
He explained that I should not do that, just put the noddle on a drain and loose it up with chop stick. The heat in the noddle stream out the moisture, and next time when I try it, the noddle stay soft and not like fry noddle.
